Shrimp sandwiches:

1 pound raw shrimp, peeled and deodorized (tails to taste)

1 tablespoon taco seasoning

1 teaspoon garlic powder

14 oz. slaw bag or 3 cups shredded cabbage

½ small bunch finely chopped coriander

Avocado oil for frying

Ground black pepper to taste

9 corn tortillas

Guacamole, optional

Shrimp taco sauce:

½ cup plain yogurt 2% + fat

¼ cup mayonnaise (avocado oil mayonnaise is a good option)

juice of 1 lemon

½ teaspoon taco seasoning

Half a teaspoon of salt

cayenne sprinkle

Ground black pepper to taste

1. In a medium bowl, add shrimp, 1 tablespoon taco seasoning, garlic powder, and pepper. Stir and set aside.

2. In a small bowl, add the yogurt, mayonnaise, lime juice, taco seasoning, cayenne pepper, and black pepper. Stir and set aside.

3. Heat a large non-stick ceramic skillet over high heat and add the shrimp. Cook until pink on the bottom, flip and cook until the gray is gone. For more charcoal, flip once and press down on the shrimp with the spoon. Or you can grill the shrimp on a silicone mat over high heat.

4. In a large bowl, add slaw, cilantro, salt, and almost all of the sauce, reserving some for dripping onto tacos. Gently stir.

5. To assemble the tacos, heat the tortillas in a cast iron skillet over high heat for 10 seconds per side and pressing down on them with a spoon.

6. Fill each tortilla with 3-4 shrimp, some slaw and sprinkle with the sauce. Serve immediately with guacamole if desired.
