Colorado has always been a great hotspot for integrating food cultures including Mexican and Latin American cuisine. In recent years, birria tacos have grown in popularity among food trucks and restaurants due to the endless amount of taco dipping Boomerang videos that have taken over social media. While Colorado doesn’t have an abundance of places that serve tacos, Beria – the few establishments that serve tacos well.

Inside information: La Unica Birria De Res is a beef stew-focused Tijuana-style food truck that can be served on its own or as a taco filling. Founded in 2016, this food cart not only serves tacos, but also quesaberias, burritos, tortas and consomé. This van is traditionally open Saturday and Sunday from 9 a.m. until supplies run out. Not only does this truck serve up periya tacos, but it adds stewed meat to just about any dish including nachos, french fries, pasta, burritos, and tortas. Inside information: Birria Y Mas from Pancho’s is another food stall in the Denver metro area that focuses on delicious wild tacos from a bright red truck. While most locations are testing different ways to incorporate birria into main meals like ramen and burritos, Pancho’s Birria Y Mas pushes the envelope with a new birria sub sandwich and a side of consommé for a dip—a similar idea to a French dip. Inside information: While birria has become almost as popular as avocado toast, the menu at Kike’s Red Tacos uses this tender meat in different ways from tacos and burritos to quesatacos and Tortas. While traditional tacos are taken out of the garden, there’s just something about the cheese birria quesadilla that sets this food truck apart from the rest.
