Baked Feta Bites Recipe – How to Make Baked Feta Bites

If you’re a fan of Cranberry Brie Bites, we’ve got news for you: There’s a new holiday app in town, and it’s inspired by another fan, Baked Feta Pasta. This cheese stick food features the flavors you know and love, all wrapped into bite-size cups of golden crescent dough.

Pro tips:

Roasted red peppers are perfect for this recipe, but sometimes they are cut into small pieces. If you can’t make 24 2-inch squares, just fill each crescent cup with an even layer of peppercorns, leaving a little extra dough uncovered around the edges.

If you can’t find whole pieces of feta cheese, crumbled feta will work just fine. Add about 1 teaspoon for each crescent moon.

To give each bite a light dusting of lemon peel, we prefer to peel directly over the bites with a Microplane rather than grated in a bowl, which will clump together. Make sure you grate only the delicious yellow outer layer of the peel, not the bitter white pulp underneath.

  1. Preheat the oven to 375 degrees and set the oven rack to the central position. Roll out the crescent dough and cut it together. Using a chef’s knife, cut into 24 squares; Lengthwise to quarters and width to sixths. Grease a small muffin pan with cooking spray and place the squares into the slots of the muffin tin.
  2. Fill each square with a slice of roasted red pepper, a cube of feta cheese, and sprinkle with thyme and shallot leaves. Season the bites lightly with salt.
  3. Bake until dough is set and golden, 15 to 17 minutes. Let cool for 5 minutes, then transfer to a serving dish and top with more fresh thyme leaves. Grate a light layer of lemon peel over the bites and serve.
