Need an easy appetizer? These asparagus bundles couldn’t be easier. This buttery brownie pancake is stuffed with prosciutto, asparagus, and brie cheese and topped with salted honey butter to make it super addictive. It’s a great way to use asparagus when it’s in season and a fun Easter appetizer.

bunch of asparagus, ends trimmed

1 tbsp.

Extra virgin olive oil

All-purpose flour, surfactant

sheets of puff pastry, thawed according to package directions

8 oz.

Brie wheel, cut into 12 pieces

  1. Preheat the oven to 400 degrees and put parchment paper on two large baking sheets. In a small bowl, mix the melted butter, honey, and salt.
  2. In a medium bowl, toss asparagus in oil.
  3. On a surface lightly sprinkled with flour, working one at a time, roll the puff pastry into a 15 by 10 inch rectangle. Cut each into 6 squares for a total of 12 squares.
  4. Put the square in the shape of a diamond and grease it with the butter mixture. Top with slice of prosciutto, fold as needed to fit inside box. Put a few pieces of asparagus and a brie slice on it. Fold the left side from the top and brush with egg wash. Fold the top right side out and brush the surface and sides with more egg wash. Put pepper on top. Place on a baking sheet and repeat the process with the rest of the puff pastry dough.
  5. Bake until golden and cheese is melted, about 15 minutes.
  6. Grease it with more butter mixture before serving.
