On a recent visit to one of our local farmers markets, I stocked up on food and started thinking about all the great dishes I could use it for.

I came up with blueberry muffins and coffee cakes, as did the wonderful cheesecake my sister-in-law used to make.

This delicious dessert features a shortbread-like crust and cheese filling. Some sugar-coated berries are baked with the tart, and I deviated from the original recipe and decided to sprinkle the rest of the uncooked berries on top when the dessert was done cooling.

This rich, crowd-pleasing dessert will be a welcome treat at the summertime pot.


Blueberry Cheese Pie

(serves 10 to 12)

1 c. (250 ml) soft butter

2/3 c. (160 ml) sugar

1/2 tsp. (2 ml) vanilla

2 c. (500 ml) all-purpose flour

1/2 tsp. (2 ml) baking powder

Cream cheese filling

2 8 oz. (250 g) kg. Soft cream cheese

1/2 c. (125 ml) sugar

2 eggs

1/2 tsp. (2 ml) vanilla

3 cups (750 ml) blueberries

1/4 c. (50 ml) sugar

1 tbsp. (15 ml) lemon peel

directione:

1. To prepare the crust, whisk together the butter and sugar in a medium-sized mixing bowl. Add the vanilla. Add flour and baking powder and mix well.

2. Spread on the bottom and two inches (four centimeters) on the sides of the greased 9 inches. 23 cm frying pan.

3. Bake in a preheated oven at 400 F (200 C) for 15 minutes. Take out from the oven and cool.

4. To prepare the filling, mix cream cheese, sugar, eggs and vanilla. Beat with electric mixer until smooth. Pour evenly over the pastry.

5. Mix blueberries, sugar, and lemon peel in a bowl. Pour 3/4 of it over the cream cheese filling.

6. Return to the oven and bake for 30 minutes. Reduce the heat to 375 F (180 C) and bake for another 15 minutes.

7. Remove from the oven and place on the cooling rack. Place the remaining blueberries on top.

8. Refrigerate for at least two hours. (This step is important to set the tart)

9. Take it out of the fridge 20 minutes before serving.

Options: Consider adding some peach slices on top of this dessert just before serving.
