Step one: prepare the chicken
If you’re working with whole chicken breasts, cut them into 1-inch-thick strips. Sit aside.
Step 2: Season
In a gallon-size zip-top plastic bag, add chicken, 1 teaspoon salt, and buttermilk. Close and leave for 30 minutes.
Step three: Mix the spices
Meanwhile, combine imitation seasoning mix ingredients in a small bowl and set aside.
Step 4: Make Doritos Paint
When ready to cook, combine flour and crushed Doritos in a shallow bowl.
Step 5: Cover the chicken
Remove the chicken from the milk, shake to remove any excess, and dip each piece into the chicken baking mixture. Repeat until all chicken is covered.
Editor’s note: To get the maximum crunch and the Dorito’s coverage, be sure to press the wrap onto the chicken pieces firmly to make sure it sticks well to the chicken.
Step 6: Bake
Preheat oven to 400°F, and coat a tray with wire racks coated with cooking spray.
Arrange the Dorito chicken pieces on an oven tray and spread the melted butter on both sides. Bake for 15-20 minutes until golden and crispy—the chicken should reach an internal temperature of 165 degrees.
Editor’s tip: Why wire shelves? It helps circulate the heat around the chicken in the oven and allows any juice from the chicken to drip to the bottom—while keeping the undersides of the chicken pieces crispy. No need to stir!
Step 7: Season
Remove the chicken pieces from the oven and then, if using, immediately sprinkle them with our homemade Doritos cheese seasoning mix.
Step 8: Apply
Serve directly or with your favorite sauces. These Jalapeno Ranch Sauce, Homemade Blue Cheese Sauce, or Easy Queso are excellent options.
