  • 1 cup of milk
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1 pound chicken breast, cut into 1-inch strips (or tenderloin pieces)
  • 1 tablespoon melted butter

  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika or smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried parsley
  • 1 teaspoon salt
  • 2 tablespoons grated Parmesan cheese

If you’re working with whole chicken breasts, cut them into 1-inch-thick strips. Sit aside.

In a gallon-size zip-top plastic bag, add chicken, 1 teaspoon salt, and buttermilk. Close and leave for 30 minutes.

Preheat oven to 400°F, and coat a tray with wire racks coated with cooking spray.

Arrange the Dorito chicken pieces on an oven tray and spread the melted butter on both sides. Bake for 15-20 minutes until golden and crispy—the chicken should reach an internal temperature of 165 degrees.

If you’re loyal to frying instead of baking, fear not. For fried Dorito chicken, heat a 1-inch deep skillet or Dutch oven in canola oil to 350 degrees. Add 2 to 3 Dorito crispy chicken pieces to the skillet and fry until golden on one side. Flip and continue cooking until the chicken is completely cooked through.
