Ray Drummond gets the recipe for spiced tomatoes from her sister-in-law
Drummond wrote about the marinated tomato recipe in a 2011 blog post for The Pioneer Woman.
“My sister-in-law Macy’s brings these marinated tomatoes to her Fourth of July bash every year, and as far as I’m concerned, they are essential to my emotional well-being,” Drummond wrote. “Amidst all the grilled steaks, warm corn casserole, and potatoes, the fresh, cold flavor of tomatoes always hits.”
The Food Network host continued, “What also plagues the place is that Macy’s, for reasons unknown to me, insists on moving her tomatoes into a food storage container and leaving them with me at the end of the night. She probably knows how much I love them. She probably doesn’t want to spoil her fridge.”
She added, “I’ll tell you that while these tomatoes are good for the Fourth of July meeting, they’re even better the next day. And the day after?…That’s what I did: make bruschetta.”
How to make Ray Drummond Marinated Tomatoes
Drummond Made Macy’s Marinated Tomatoes in an episode of leading women. The sauce is made by combining olive oil, red wine vinegar, sugar, salt, pepper, sliced green onions, parsley, basil, ground thyme, and minced garlic in a bowl. She poured the sauce over “a great mix of all kinds of tomatoes—different colors and shapes, some sliced, some in chunks.”

“This salad is especially great because, first of all, you can make it ahead of time,” she said. “But secondly, it gets better and better because it’s put in the fridge.”
Drummond assembled the dish by putting buttered lettuce leaves on a plate, spooning the seasoned tomatoes on top, and covering them with basil.

Drummond made her a herb-spiced tomato salad on the first episode of leading women As part of the Ultimate Ranch Dinner.
“Since it’s such a wonderful time of year right now and I’m growing herbs on the farm, I’m going to make a really colorful and amazing marinated tomato salad,” she explained.
Slice the Drummond tomatoes and place in a bowl, then add the sliced green onions. I made a simple vinaigrette by combining balsamic vinegar, olive oil, brown sugar, salt, and pepper. “I don’t like to whip up my own vinaigrette,” she said. “I like to put them in masonry pots and shake them.”
I poured enough vinaigrette over the tomatoes to coat them and tossed everything together. Drummond added fresh chopped parsley and basil leaves. “It sounds so good,” she said, “and the flavors would be out of this world.”
