Drummond showed how to make her easy spin on ice cream sandwiches during an episode of leading women. “We’ve heard of icing cakes,” she said. “I’m going to make icebox sandwiches.”
I started by making instant French vanilla pudding by whisking in milk and then letting it thicken before adding peppermint extract.
“This is a kind of chocolate mint from an ice-box sandwich,” Drummond explained. She added green food coloring. “This is going to be nice, bright green at first, but we’ll smooth it out in just a second,” the Food Network host explained. “I’ll show you how.”

Then she added the little chocolate chips. “I love these sandwiches,” she said. “They’re great for summer. You can keep them in the freezer. Well, they’re great year-round, let’s face it.”

‘The Pioneer Woman’ star collects sandwiches
Drummond built sandwiches next. She covered a quarter tray with plastic wrap and laid a layer of chocolate graham cracker squares down and poured the mint pudding mixture in the middle. She spread it over the edge and placed the remaining chocolate cracker squares on top.
leading women The star brought up the sides of the plastic wrap to cover the sandwiches and put them in the freezer for at least an hour before slicing the dessert.

Ray Drummond makes simple frozen dessert cups
Drummond has another easy freezer dessert to make on hand. Frozen confetti cups come together quickly with just a handful of ingredients. She said on an episode of “What a fun dessert, so easy to make.” leading women.
“I’m sure you’ll want to make this stuff,” Drummond added, “so let me show you the recipe.”
The Food Network host line each muffin pan with paper liners and then pulse the vanilla sandwich cookies into crumbs in a food processor. I poured the melted butter into the biscuit crumbs and pulsed to mix the ingredients. Then Drummond squeezed the crumb mixture into each muffin cup with the back of a spoon.
leading women Starr combined crushed biscuits with slightly fluffy vanilla ice cream and drizzled granules, then poured the mixture over the “crust” into muffin cups.
Decorate the tops of the cups with rainbow sprinkles and white chocolate shavings and then put the candy in the freezer for two hours.
Once frozen, she removed the cups for the scraps from the pan and placed them in a single layer in resealable bags for storage in the freezer.
