When Mickey Rebollo and her family opened their first restaurant in Mattoon in 2016, they felt the need for neighborhood business due to the lack of many dining options on the city side. Now surrounded by community gathering places like the pool and high school, the family witnesses how the city thrives. Rebollo said the support of local residents is important to Taco Amigos, and the restaurant is now giving back to the community through donations. “We are growing with our family, and our family restaurant is growing as well,” said Repolo. “It was such a big part of life.”

Taco Amigos’ bestseller is Chicken on The Beach, a bed of rice topped with grilled chicken and cheese – a simple dish that’s especially popular with the younger crowd.
