In Italian, “A Mano” means “by hand.” And let me tell you, A Mano’s makes everything by hand, including authentic Neapolitan pizza. Each pizza takes about 90 to 120 seconds to cook, according to chef Simone Ferrara, who was born, raised, and trained in classics in Italy. A margherita that uses fior di latte mozzarella is an obvious staple, as is La Bianca, which is a pizza with mozzarella, ricotta, mushrooms, and garlic.
