Each pizza takes about 90 to 120 seconds to cook, according to chef Simone Ferrara, who was born, raised, and trained in classics in Italy. A margherita that uses fior di latte mozzarella is an obvious staple, as is La Bianca, which is a pizza with mozzarella, ricotta, mushrooms, and garlic.
