  1. Preheat the oven to 350 degrees and place parchment paper on two cookie sheets. Beat butter and sugars until light and fluffy, 3 to 4 minutes. Mix in eggs and vanilla.
  2. In another bowl, whisk together the flour, cornstarch, baking soda, and salt, then add the mixture to the wet ingredients and mix until smooth. The dough will be thick.
  3. Using a small cookie cutter, place 1 tablespoon of dough balls on parchment-lined cookie sheets. Gently tap each cookie to flatten it slightly. Bake until edges begin to turn brown, 9 to 10 minutes.
